3 Mom Blogs I Love

Hey everybody,

I hope you’re all having a fantastic week!  This week I thought we would depart a little bit from cooking.  I wanted to show you some fun mom blogs that I read. Now why do I think mom blogs are important, Well, I can tell you as I’ve been raising my kids for the last 7 years that I have found a lot of help, faith and genuine camaraderie in reading mom blogs.

 They have taught me a lot about myself.  They have taught me that I’m a good mom and that I make mistakes.  Mom blogs have taught me how to cook.  How not to be scared of  Pinterest LOL, and that being a mom is one of the best jobs in the world.  So I thought this week.  I would show you 5 mom blogs that I really, really love.  Let’s get started.

 1.  The Better Mom www.thebettermom.com: I first  discovered the better mom on Face Book.  I loved her posts and then went looking for her blog.  When I started to read her blog I was immediately lifted up.  She definitely mixes motherhood and faith very well and I find inspiration from her always.

2.  Confessions Of A Homeschooler www.confessionsofahomeschooler.com: I fell in love with this blog looking for homeschooling curriculum.  Erica, the author is very personable. She writes about her family and their journey through homeschooling.  The one thing that I love about this blog is that you don’t have to be a homeschooler to enjoy it.  She has so many resources for just moms  and I enjoy her tips, tricks and down-to-earth humor as well as the way she mixes in faith with her blog.

3.  Joyful Mothering www.joyfulmothering.net: This is such a welcome surprise.  This blog is such an inspiration. When I fell upon this blog, I was reading a post that seemed like it was going to be her last post and it made me kind of sad. I looked at all the web design and her writing style; I looked at all the things that she had said as well as other blog posts and thought wow what a great writer!  What an inspiration!  And my first instinct was to scream . Please don’t give this up! I need you!  I think she will continue but in another light doing something slightly different.  I still love this blog, so I included it. I also have to say that she has one of the best blogging books I have ever read http://joyfulmothering.net/my-ebook/.

Well there you have it, 3 mom blogs that I really love to read and why I think reading mom blogs has such significant value.  It is my goal with each post that I write to inspire you in your walk with faith and motherhood.  I wanted to share this with you because these blogs inspire me.  Do you have a favorite blog that you like?  I would be so happy if you would share it below.

Tater Tot Casserole

Tater Tot Casserole

Hey everyone,

 I hope you are having a great week!  This week has been a really fun week for us. We have visited the skate park for the first time. Flew a kite on a nice breezy day, had a mom and son dance (some of us are big fans of the YMCA song  and can do the dance, that’s all I will say about that) and we took Grandpa out for lunch on Sunday.  A nice full week.

This week’s recipe is a classic.  It is one of my family’s favorites. If you haven’t guessed yet I love casseroles and one pot dishes. This one is simple. This is one of the first recipes I ever learned to make.

Prep time: 15 min, cooking time 45 min

 Ingredients:

 Use 1 lb ground beef or turkey meat.

 1 small bell pepper, rough, chopped

 1/2 of a small onion, rough, chopped

 1 can diced green chilies

 1 tablespoon taco seasoning or chili powder

 1 can cream of chicken soup ( I use the healthy request from Campbell’s)

 1 can drained green beans.

 1/2 of a bag of frozen tater tots.

 1 cup shredded cheddar cheese 2%

 The set up:

Step 1:

Brown ground beef or turkey in a large saucepan

 Add onions and bell pepper and green chiles (bell pepper and green chiles are optional)

 Add taco seasoning and/or chili powder

 Continue to simmer these ingredients until bell peppers and onions are soft.

 Step 2 :

Pour meat mixture into medium baking dish (approximately 8 x 11.5)

 Spoon 1 can of healthy request cream chicken soup on top of the meat mixture.

 Sprinkle on one can of green beans.  I use the ones with less salt, but you can also use fresh if you have them.

 Add half  of a bag of tater tots on top of the casserole.

 Sprinkle on 1 cup shredded cheese.

 Step 3:

Bake at 400° for 45 min.

When you pull this out of the oven it will be bubbly and hot. Let it rest for about 5 min and then serve with a simple fruit salad.  Enjoy!
